recipes I've tried this week

I became an aunt this week (for the second time). Little Adelina (named after my grandmother) came into the world on Thursday and she is such a sweetie. They are headed home today and Isabella and Simon can't wait to meet their new little cousin.

The weather has been really mild this past week and looks like it will continue. So nice to not have to layer too much. Winter can take it`s time coming. Even better, it can not come at all. LOL! (I HATE winter).

On Saturday, my mom and my niece Gia came over to have dinner with Simon and I. I made a DELICIOUS gnocchi dish that I plan on making again. I had seconds and Simon devoured it. Gia didn't care for it as it was not like the spaghetti her mom makes. My mom loved it. 3 out of 4 ain't bad.

The next few dishes were all really good and will be made again: sloppy joes, chicken fajitas and smothered pork chops. Yum, yum and yum.

Today I am baking two loaves of the banana bread that I made last Sunday. I only made one loaf last weekend and that was a damn shame. Pablo and I couldn't have any because the kids loved it and I needed it to last the week for school snacks for them. I learned my lesson.

Once the banana bread comes out of the oven, I am making butterscotch apple pudding cookies. They sound and look delicious:

simon says...and a welcome to the family

Simon was waiting (impatiently) to go to school the other morning and asked Pablo what time it was.

"It's 11:34" Pablo said.

"Oh my goodness, I have to go pay my taxes! I don't want to get in trouble with my boss or the government!" Simon exclaimed.

????? where this came from, we have noooo idea...

And a HUGE congratulatory message to my sister Jen and BIL Dave on having the cutest 8 pound little girl this morning. Adelina is freaking adorable and her cousins can't wait to meet her.
