recipes I've tried this week

I managed to put up all the Christmas decorations over the weekend. I'll try to take some photos next weekend. Our tree is really cute - decorated with mostly felt decorations (kid proof!). The next couple weeks at work are going to be insane but having a couple weeks off at Christmas will make up for it. Got alot of the gift shopping done already, thank goodness. We took the kids to the local Santa Claus parade last night. Froze my touche off. The kids loved it but Isabella said she wished Christmas was during a warmer month....

Made some good meals this week starting with enchilada pasta. It was good but Simon didn't like the black beans in the pasta:

The next two dishes don't have good photos and I didn't think to take my own photos. The first was Pork chops with golden apple sauce. Nothing goes better with pork than applesauce and this homemade apple sauce was delicious. I made mashed potatoes and green beans as sides. I had a bad craving for a juicy burger and went looking for a recipe that we all would like. Found this recipe for killer inside out burger with worcestershire tomato ketchup. FAB. I forgot Isabella didn't like bacon (weirdo) so she managed to take the bacon out of the middle of her burger...it was a sad bacon moment.

Wanted to try a non blueberry muffin/bread for this week and found these healthy applesauce oat muffins. Pablo just stole one off the counter as they were cooling and he said they were good so I'll take his word for it. I added golden raisins (Simon confirmed I could add them).

When I found this recipe for chocolate caramel oatmeal bars, I knew I had to try them. They too are cooling as I type this so not sure how they taste but they sure look yummy.
