recipes I've tried this week

What a tiring week. My first full week back at work and I was still sick all week. I was in bed by 8pm almost every night. Feeling better this weekend - just a bit congested still. Spent the week looking at photos my sisters were posting on their trip to visit our parents in Puerto Vallarta. It looked so freaking warm there. I miss the warmth....our winters are WAYYYYYY too long.

Cooked some good stuff all week. My favourite was probably the maple-glazed chicken. I made roast potatoes with it. Loved by all.

Last week, I made this loaded broccoli cheese and bacon soup. SOOOOOOOO good. Just what I needed to help fill my stomach while dealing with the flu.

I bought a flank steak (one of my favourite cuts of beef) so I found this recipe for steak pizzaiola. Steak and tomato sauce - different and REALLY delicious.

Isabella really wanted me to make a meal with tortillas so on a night when dinner had to be quick, I made chicken tostadas. I used flour tortillas and used store bought salsa instead of making the tomatillo salsa. Sliced up some avocado on the side too. A very light and fresh meal, devoured in no time.

The last meal I made was easy and due to the sausage - a favourite with the kids - even Isabella who hates pasta. One pot baked ziti.
