recipes I've tried this week

YAY long weekend! We had an absolutely insane week this past week mainly due to the kids having baseball Monday-Thursday. That meant I had about an hour from the time I got home from work to the time we had to be out the door and on our way to the baseball field. I had no idea what I could prepare for dinner in a half hour (it takes Simon long to eat so it had to be ready quick). Tried a couple dinner-breakfast things which the kids loved but I found lacking in dinner substance (I was starving a couple hours later). Yesterday we spent the day at my sister and BIL's cottage (hence no instagram post yesterday). Both kids play on the same night this week and then Friday we are off on a family long weekend trip.

The best dinner I made this week has got to be, hands down, greek tacos. I had to make it with ground beef since the damn grocery store rarely has any ground chicken or turkey (they actually had both when we went grocery shopping this morning so I stocked up). This is a quick and easy meal that is FULL of delicious flavours.

And some breakfast food I made for dinner: grilled peanut butter honey banana waffle sandwich. The kids loved this. I will try it again but for breakie.

And then there was apple pie pancakes with vanilla maple syrup. These were really good and again, I will for sure make these again, but for breakie.

Since I have tomorrow off, I am going to bake tomorrow since we spent the afternoon today at a local fair. I am making cinnamon sugar crust cinnamon ribbon bread.
