End of August already. Depressing. I am really going to miss summer. Crazy to think that the kids start school on Tuesday (Isabella is starting grade 3 and Simon will be in SK). They are both excited. I on the other hand am not looking forward to spending each evening in the kitchen making dinner and then preparing food for work/school the following day. Simon is in full day senior kindergarten this year so I am wracking my brain for ideas for both kids for school lunches. Not sure what Pablo is going to do with all this free time once the kids are back in school and both gone all day...
I've been too busy trying to enjoy the last of the summer to spend time doing extra blog posts so I have alot of recipes saved up to blog. These first two recipes I made yesterday - for a BBQ at my parents' place. Both I had never made before and both were big hits: warm potato salad with pancetta and brown butter dressing and garlic lemon parmesan oven roasted zucchini. We had these sides with beef tenderloin. YUMMMMM.
I made a couple of soups. Both quite similar and both were scrumptious and will be made again: chicken potato chowder and spicy chicken corn chowder.
Still on the hunt for a fantastic burger and this one was a hit: sriracha and cheddar juicy lucy burgers (and we added the fried egg):
Must have pasta every so often so we tried quick and easy bucatini all'amatriciana and mozzarella penne. Both yummy and easy and loved by all.
Isabella needed her fajita fix so I tried this oven fajitas recipe. Loved it because I didn't have to stand over the stove to fry it. Isabella was happy. :)
I love Ikea's swedish meatballs and had to try this recipe for swedish meatballs. Pretty darn close to Ikea's...
