I haven't given much of a family update lately so here's a bit of a Simon update. With Simon starting kindergarten in September, we've been working real hard to get him out of diapers. We started a few weeks ago (this is probably the fourth time we've tried in the last two years) and Simon has thankfully embraced the process (YAY!). Only a couple of accidents in the last few weeks. Diapers still required at nighttime but whatever. We'll take it. Simon was accepted in a 'Tools for School' program at our local children's hospital. This is a program that runs for 3 weeks, Tuesday and Thursday mornings. Simon is starting the last week this coming week and it's a great program. They help the kids recognize their name, hold a pencil properly, use scissors, etc. - all the things kids need to know when they start school. Simon has been doing great and has had no 'accidents' while he's been there either. We're so proud of him. I feel really comfortable about him starting school in September.
And now onto meals I've made this week. Since our car is in for expensive repairs (damn you stupid car), we haven't been able to get a new BBQ since ours is no longer working so no grilling this past week. Not so bad since it's been over 40 degrees celsius (I think that's triple digits in fahrenheit) this week and grilling in this heat would not be fun. To start, I made a
chicken and asparagus stir-fry. I haven't made a stir-fry in awhile and this one was easy and delicious:
Simon again requested spaghetti and meatballs this week (his fav) so I made my usual go-to spaghetti and meatball recipe:
Not sure why I was craving chili in this heat but I was and I had to make some. I tried this
smoky black bean chili and added some ground beef and it was the best damn chili I have had in a very long time. Amen. I've discovered that the key to a really good chili is chipotle peppers in adobo. The smoky flavour is to die for.
For something sweet for this week I'm going to make
s'mores no bake cookies:
