recipes I've tried this week and last

Easter weekend was busy and fun but geez a four day weekend goes by fast! LOL! I was tired all this week at work and couldn't wait for this weekend to start. Now it is almost over and I wish I could just freeze today for a little while longer...

Isabella had the flu over Easter weekend (complete with fever) and she still has a lingering cough which keeps me up at night. I feel the beginnings of a sore throat so I might be doomed...

I've got two weeks of recipes to report on so I'll get started. This first recipe was perfect if you need a fast weeknight meal - baked honey lime chicken taquitos. We polished them all off in no time.

Next was classic cheesy stuffed sausage pasta bake. This was so good and I ended up bringing the leftovers to work for a few days and still delicious. Definitely have to make this again. I love any dish that includes ricotta and the kids love any dish that includes sausage so BINGO! :)

picky palate

I must have had ricotta on the brain lately because I also made this stuffed chicken dish I found on instagram. All I did was mix some ricotta with spinach and parmesan and rolled it inside some thinly sliced chicken breasts. Wrapped some prosciutto around it and put it in the oven and VOILA. I loved it and the leftovers are coming to work with me tomorrow. Here is what mine looked like (served with corn and roast potatoes):



Hadn't had rice in a bit so an easy stir fry made it into this past week's rotation: easy 20 minute teriyaki chicken and broccoli. I loved the teriyaki flavour and I added some chili peppers for some spice - to my dish only. ;)

Simon begged for spaghetti and meatballs again so instead I made this 30 minute weeknight pasta sauce. A fabulous alternative from having to make big meatballs on a weeknight. I just told Simon that these were tiny little meatballs and he stared at me funny. Oh well, I tried. He loved it just the same.

Moving onto baking. For Easter dinner, my sisters and I all made desserts and I chose to make a lemon cheesecake. This cheesecake had a lemon curd topping and I am now a huge fan of lemon curd as I had never made it before. I didn't want it too sweet so I made it with 2 bricks of light cream cheese and 1 regular - next time I will use 2 regular and 1 light. Whatever, it was still soooooooooo good.

I made blueberry applesauce snack cake for Simon to bring to school but he wasn't too fond of it. I found it a tad bland although not quite sure what it was missing...

Today I am excited to make something I made a few months ago - bakery style blueberry scones. These were to die for when I made them last and this time I will have to make a double batch. Here's to hoping that fresh blueberries are on sale...
